text from "Historical Overview" in Feeding Desire exhibition catalogue:
" As with Scandinavia (figs. 64,65) and the Low Countires, the prevalence of spoons among the extant flatware from eighteenth century Russia implies that fork usage probably only made major strides with teh arrival of Catherine the Great, a German princess who came to the throne in 1762 and set out to make St. Petersburg an enlightened Western capital."
